Tomato Soup

Ingredients

  • 2-3lbs tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 1T fresh oregano (loosely packed)
  • 1/2c fresh basil (loosely packed)
  • large pinch salt
  • hefty grind black pepper

Instructions

  1. Preheat oven to 400ºF
  2. Quarter tomatoes, removing woody centers and crusty spots
  3. Peel garlic
  4. Place tomatoes, skin side down, and garlic on foil-lined baking sheet. Drizzle with olive oil.
  5. Baked tomatoes and garlic 45min.
  6. While tomatoes bake, slice and caramelize onion in olive oil.
  7. Add tomatoes and garlic to onions. Add salt, pepper, basil and oregano. Blend until smooth.
  8. Give it a couple minutes to combine on very low heat.

Notes

  • Optional extra veggies can be roasted with tomatoes and garlic (carrots and poblano pepper have been good). Those veggies should be turned every 10-15 minutes while tomatoes bake.
