Tomato Soup
Ingredients
- 2-3lbs tomatoes
- 1 medium onion
- 4 cloves garlic
- 1T fresh oregano (loosely packed)
- 1/2c fresh basil (loosely packed)
- large pinch salt
- hefty grind black pepper
Instructions
- Preheat oven to 400ºF
- Quarter tomatoes, removing woody centers and crusty spots
- Peel garlic
- Place tomatoes, skin side down, and garlic on foil-lined baking sheet. Drizzle with olive oil.
- Baked tomatoes and garlic 45min.
- While tomatoes bake, slice and caramelize onion in olive oil.
- Add tomatoes and garlic to onions. Add salt, pepper, basil and oregano. Blend until smooth.
- Give it a couple minutes to combine on very low heat.
Notes
- Optional extra veggies can be roasted with tomatoes and garlic (carrots and poblano pepper have been good). Those veggies should be turned every 10-15 minutes while tomatoes bake.
