Sweet Potato Gratin
Ingredients
- 6 T butter, cut in small pieces
- 2.5lbs sweet potatoes, thinly sliced
- large onion, sliced thinly
- 2t thyme
- 1 c Parmesan
- 1.5 c heavy cream
- 1 T salt
- 1/2t pepper
Instructions
- Heat oven to 400 degrees.
- Butter a 9”x13” baking dish. Layer sweet potatoes, onions, butter, cheese, and thyme, ending with a potato layer.
- Combine heavy cream, salt, and pepper, and pour mixture over potatoes.
- Bake 40 minutes covered, then 30 minutes uncovered.
Notes
- Alterations: sub feta for Parmesan, sub condensed milk for heavy cream, omit salt.
