Shakshuka

Ingredients

  • Medium onion, diced
  • Two cloves garlic, minced
  • Tbsp olive oil
  • 1 can diced tomatoes
  • 1 can chuck peas
  • Cumin
  • Chili powder
  • Crushed red pepper
  • Oregano
  • 3 eggs

Instructions

  1. Sauté onions and garlic in oil
  2. Add spices
  3. Add tomatoes
  4. When boiling, add chick peas
  5. When boiling again, make a small well for each egg, and crack them in
  6. Simmer with lid on for five minutes

Notes

  • Good topped with goat cheese
  • Original recipe suggested red bell pepper as well
  • Maybe some lemon juice next time
