Rice Pudding
Ingredients
- 0.75 cup medium-grain white rice
- 1.5 cup water
- 0.25 tsp salt
- 4 cups whole milk
- 0.5 cup sugar
Flavor
- Teaspoon vanilla added after last step
- Lemongrass, ginger, cardamom added to water for boil
Instructions
- Bring water, salt, and rice to simmer, reduce heat to low, cover and simmer until water absorbed (~15min)
- Stir in milk and sugar
- Cook uncovered over medium heat, stirring frequently especially toward the end of cooking. Pudding is done when the texture is right: a thick porridge. Probably about 40 minutes.
- Remove lemongrass and ginger if added earlier
