Rice Pudding

Ingredients

  • 0.75 cup medium-grain white rice
  • 1.5 cup water
  • 0.25 tsp salt
  • 4 cups whole milk
  • 0.5 cup sugar

Flavor

  • Teaspoon vanilla added after last step
  • Lemongrass, ginger, cardamom added to water for boil

Instructions

  1. Bring water, salt, and rice to simmer, reduce heat to low, cover and simmer until water absorbed (~15min)
  2. Stir in milk and sugar
  3. Cook uncovered over medium heat, stirring frequently especially toward the end of cooking. Pudding is done when the texture is right: a thick porridge. Probably about 40 minutes.
  4. Remove lemongrass and ginger if added earlier
