Reuben Casserole

Ingredients

  • 16 oz. sauerkraut
  • 8 oz. sour cream
  • 6-8 oz. Swiss cheese (sliced or grated)
  • 12 oz. corned beef (sliced or shredded)
  • 1 tsp. caraway seed
  • 1 Tbsp. (scant) sugar
  • 6-8 slices rye bread (cubed)
  • 1 stick butter

Instructions

  1. Mix sauerkraut, sour cream, caraway seed, and sugar in a casserole dish.
  2. Layer swiss cheese over.
  3. Crumble corned beef over.
  4. Melt butter in a skillet. Toast rye bread until it has soaked up the butter and browned.
  5. Spread bread over casserole.
  6. Bake at 350 for 40-50min. (until hot and bubbly)

  • quartered rounds of bratwurst substitute well for the corned beef
