Ramen

For two people

Ingredients

Broth

  • Half of a large onion, sliced
  • Three cloves garlic, minced
  • Ginger, 1T fresh minced
  • Turmeric, 1t powder
  • White or red miso, 1-2T
  • 1qt water
  • Ramen noodles
  • 1T Vegetable oil
  • 1t Sesame oil
  • Bouillon

Toppings

Suggestions only; pretty much anything works.

  • Eggs in any form, but poached or soft boiled are favorites
  • Carrots
  • Peppers
  • Kale
  • Sriracha
  • Soy sauce
  • Radish
  • Pickled things

Instructions

  1. Wilt onions in vegetable oil and sesame oil over medium high heat
  2. Add garlic and ginger, and continue frying until just starting to brown
  3. Add turmeric and miso, fry for 30sec
  4. Add water and bouillon, bring to boil
  5. Add ramen noodles, boil until finished
  6. Divide between bowls and add toppings as desired.

Notes

  • An easy way to do eggs is to crack them directly into the boiling pot one minute before the noodles are finished. If added whole, and stirred gently, this makes basically poached eggs.
  • Careful with the sesame oil - it’s very easy to overwhelm.
