Quick Pasta Sauce
Ingredients
- Two tablespoons olive oil
- One red onion, diced
- Three cloves of garlic, minced
- One red bell pepper, diced
- Generous shakes of:
- dried oregano
- dried basil
- dried parsley
- Ten grinds of black pepper
- Two pinches of kosher salt
- Six Baby Bella mushroom caps, stems removed, diced
- Ten black Greek olives, quartered
- Three 14.5oz cans of diced tomatoes
Instructions
- Heat olive oil in a large saucepan.
- Sauté onions until they begin to soften.
- Add garlic and cook another minute.
- Add bell pepper and cook several more minutes.
- Add herbs and spices and stir to coat vegetables.
- Add mushrooms and cook several more minutes, until mushrooms begin to release liquid.
- Add olives and diced tomatoes; stir to combine.
- Simmer uncovered, at least ten minutes, until tomatoes begin to break down and sauce thickens, stirring occasionally. Taste and adjust spices.
- Serve over pasta, topped with grated Parmesan cheese.
