Quick Pasta Sauce

Ingredients

  • Two tablespoons olive oil
  • One red onion, diced
  • Three cloves of garlic, minced
  • One red bell pepper, diced
  • Generous shakes of:
  • dried oregano
  • dried basil
  • dried parsley
  • Ten grinds of black pepper
  • Two pinches of kosher salt
  • Six Baby Bella mushroom caps, stems removed, diced
  • Ten black Greek olives, quartered
  • Three 14.5oz cans of diced tomatoes

Instructions

  1. Heat olive oil in a large saucepan.
  2. Sauté onions until they begin to soften.
  3. Add garlic and cook another minute.
  4. Add bell pepper and cook several more minutes.
  5. Add herbs and spices and stir to coat vegetables.
  6. Add mushrooms and cook several more minutes, until mushrooms begin to release liquid.
  7. Add olives and diced tomatoes; stir to combine.
  8. Simmer uncovered, at least ten minutes, until tomatoes begin to break down and sauce thickens, stirring occasionally. Taste and adjust spices.
  9. Serve over pasta, topped with grated Parmesan cheese.
