Plum Chocolate Cake

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2 eggs
  • 1 cup plum puree

Instructions

  1. Preheat oven to 350ºF.
  2. Grease and flour a 9-inch cake pan.
  3. In a large bowl, whisk together the dry ingredients.
  4. In a medium bowl, cream butter until light and fluffy.
  5. Beat eggs into creamed butter, one at a time.
  6. Add flour mixture to butter mixture, mixing until just combined.
  7. Stir in plum puree.
  8. Pour batter into prepared cake pan.
  9. Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Notes

  • When combining the flour and butter mixtures, the “batter” will look very dry - more like a crumble topping. The plum puree will bring it back to a wetter, yet still thick, batter.
  • About 12 small plums (slightly larger than golf balls) was about right.
