Plum Chocolate Cake
Ingredients
- 1 cup all-purpose flour
- 1 cup sugar
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 2 eggs
- 1 cup plum puree
Instructions
- Preheat oven to 350ºF.
- Grease and flour a 9-inch cake pan.
- In a large bowl, whisk together the dry ingredients.
- In a medium bowl, cream butter until light and fluffy.
- Beat eggs into creamed butter, one at a time.
- Add flour mixture to butter mixture, mixing until just combined.
- Stir in plum puree.
- Pour batter into prepared cake pan.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Notes
- When combining the flour and butter mixtures, the “batter” will look very dry - more like a crumble topping. The plum puree will bring it back to a wetter, yet still thick, batter.
- About 12 small plums (slightly larger than golf balls) was about right.
