Moroccan Chicken

Ingredients

  • 3 chicken breasts, cut into bite-sized pieces
  • 2 15 oz. cans of garbanzo beans (chickpeas)
  • 1 small red bell pepper, chopped
  • 1 red onion, chopped
  • 1/3 c raisins
  • 2T tomato paste
  • 4T water
  • 3 cloves garlic, minced
  • 3 chicken bouillon cubes
  • 2t cumin
  • 1 28 oz. can of whole tomatoes
  • 3T peanut butter

Instructions

  1. Combine all ingredients but tomatoes and peanut butter in slow cooker; mix well.
  2. Cook on low 5-7 hours or high 2 1/2 hours.
  3. Add tomatoes and peanut butter; continue cooking for 30 minutes, checking for doneness of chicken.
  4. Great served over rice.
