Moroccan Chicken
Ingredients
- 3 chicken breasts, cut into bite-sized pieces
- 2 15 oz. cans of garbanzo beans (chickpeas)
- 1 small red bell pepper, chopped
- 1 red onion, chopped
- 1/3 c raisins
- 2T tomato paste
- 4T water
- 3 cloves garlic, minced
- 3 chicken bouillon cubes
- 2t cumin
- 1 28 oz. can of whole tomatoes
- 3T peanut butter
Instructions
- Combine all ingredients but tomatoes and peanut butter in slow cooker; mix well.
- Cook on low 5-7 hours or high 2 1/2 hours.
- Add tomatoes and peanut butter; continue cooking for 30 minutes, checking for doneness of chicken.
- Great served over rice.
