Gomen (Ethiopean-Style Kale)

Ingredients

  • 1.5lbs Kale, de-stemmed and chopped
  • 1 small red onion, minced (about 1 cup)
  • 2T water
  • 1/4 cup olive oil
  • 2T garlic, minced
  • 1 medium tomato, finely chopped
  • 1 medium jalepeño, finely chopped
  • 1t cardamom
  • 1t cumin
  • 3/4t kosher salt

Instructions

  1. Boil kale in a pot of water for 15min, then drain it in a colander.
  2. Cook onion in 2T water over medium heat, until onion is translucent (about 5min)
  3. Add oil and garlic, cook for one more minute.
  4. Add tomato and jalapeño, cook 5min.
  5. Add kale, cover and cook 10min, stirring occasionally.
  6. Reduce heat, add cardamom and cumin, cover and cook 3min.
  7. Remove from heat, add salt.

Notes

  • Original recipe used collard greens instead of kale.
  • Original recipe called for “tikur azmud” instead of cardamom and cumin.
