Gomen (Ethiopean-Style Kale)
Ingredients
- 1.5lbs Kale, de-stemmed and chopped
- 1 small red onion, minced (about 1 cup)
- 2T water
- 1/4 cup olive oil
- 2T garlic, minced
- 1 medium tomato, finely chopped
- 1 medium jalepeño, finely chopped
- 1t cardamom
- 1t cumin
- 3/4t kosher salt
Instructions
- Boil kale in a pot of water for 15min, then drain it in a colander.
- Cook onion in 2T water over medium heat, until onion is translucent (about 5min)
- Add oil and garlic, cook for one more minute.
- Add tomato and jalapeño, cook 5min.
- Add kale, cover and cook 10min, stirring occasionally.
- Reduce heat, add cardamom and cumin, cover and cook 3min.
- Remove from heat, add salt.
Notes
- Original recipe used collard greens instead of kale.
- Original recipe called for “tikur azmud” instead of cardamom and cumin.
