German Potato Salad

Ingredients

  • 6 medium potatoes
  • Half of a large onion, chopped finely
  • Four cloves garlic, minced
  • 1T+ mustard
  • 1.5T miso paste
  • 0.5T better than boullion
  • 1/2c apple cider vinegar
  • 2T sugar

Instructions

  1. Clean, quarter, boil potatoes. Set aside to chill. When cooled, cut into cubes.
  2. Saute onion and garlic in olive oil.
  3. Add miso, and saute for another minute or two.
  4. Add sugar, vinegar, mustard, and boullion.
  5. When sauced has thickened, stir in potato cubes.
  6. Serve when warm throughout.
