German Potato Salad
Ingredients
- 6 medium potatoes
- Half of a large onion, chopped finely
- Four cloves garlic, minced
- 1T+ mustard
- 1.5T miso paste
- 0.5T better than boullion
- 1/2c apple cider vinegar
- 2T sugar
Instructions
- Clean, quarter, boil potatoes. Set aside to chill. When cooled, cut into cubes.
- Saute onion and garlic in olive oil.
- Add miso, and saute for another minute or two.
- Add sugar, vinegar, mustard, and boullion.
- When sauced has thickened, stir in potato cubes.
- Serve when warm throughout.
