Coffee Bean Cookies
Ingredients
- 1T instant coffee
- 2t milk
- 1c cake flour (or 2T corn starch + 2T short of 1c of all-purpose)
- 2T cocoa powder
- 3T corn starch
- 1/3c unsalted butter (at room temp)
- 1 egg yolk
- 7T powdered sugar
Instructions
- Microwave the milk for 20sec. Add coffee and whisk until dissolved.
- In a separate bowl, mix flour, corn starch, and cocoa powder.
- In a third bowl, whisk the butter until creamy. Add powdered sugar and whisk until combined. Add egg yolk and whisk until creamy.
- Mix milk-coffee into butter-egg mixture.
- Mix dry ingredient into wet ingredients until the dough looks like dry crumbs, then press together by hand until the dough is smooth.
- Roll the dough into a long log. Divide into 1/2in. cubes (about 8g or 1tsp each). Roll each cube into an oval. Press a butter knife or tooth pick into each oval to give the bean its split.
- Place cookies on a baking sheet lined with parchment. Chill in the refrigerator for an hour.
- Preheat oven to 325ºF.
- Bake cookies directly from the fridge for 12-14min.
- Cool for 10min. after baking.
