Carbonara

Ingredients

  • 1lb fettuccine or spaghetti
  • 4 eggs
  • 1/4c butter, cut into small chunks
  • 1/4c heavy cream
  • 1c grated parmesan cheese
  • 1/2lb bacon, cut into small pieces
  • 1/4c chopped parsley

Instructions

  1. Place large ceramic dish in the oven and preheat to 300ºF.
  2. Boil pasta and cook bacon.
  3. Beat eggs and cream in a bowl until well mixed.
  4. ⚠️Preheating should be done before the pasta is finished. When the pasta is finished, drain it and do the following steps in quick succession.
  5. Remove the dish from the oven, and transfer the drained pasta to it.
  6. Add the butter and toss the pasta with it until melted.
  7. Pour the egg/cream sauce over the pasta and continue tossing until well coated.
  8. Add bacon, parmesan, and parsley (plus any other additions - see notes), and toss until mixed.
  9. Serve immediately.

Notes

  • Some veggies make good additions: peas, caramelized onions.
