Carbonara
Ingredients
- 1lb fettuccine or spaghetti
- 4 eggs
- 1/4c butter, cut into small chunks
- 1/4c heavy cream
- 1c grated parmesan cheese
- 1/2lb bacon, cut into small pieces
- 1/4c chopped parsley
Instructions
- Place large ceramic dish in the oven and preheat to 300ºF.
- Boil pasta and cook bacon.
- Beat eggs and cream in a bowl until well mixed.
- ⚠️Preheating should be done before the pasta is finished. When the pasta is finished, drain it and do the following steps in quick succession.
- Remove the dish from the oven, and transfer the drained pasta to it.
- Add the butter and toss the pasta with it until melted.
- Pour the egg/cream sauce over the pasta and continue tossing until well coated.
- Add bacon, parmesan, and parsley (plus any other additions - see notes), and toss until mixed.
- Serve immediately.
Notes
- Some veggies make good additions: peas, caramelized onions.
