Bagels
Ingredients
- One loaf worth of bread dough
- 2T malt extract or brown sugar
- 1T sugar
Instructions
- Mix and knead dough, then let rise for one hour or more.
- Punch down dough, and divide into eight portions (twelve for small bagels). Roll each into a ball and set aside to rise 30 minutes.
- While rising, preheat oven to 425 and prepare water bath: boil 2qt water with malt/sugars.
- Use finger to poke hole through the center of each risen ball. Twirl around finger until hole is stretched to 1.5 inches.
- Place bagels in boiling water bath. Boil 2min, then flip and boil 1min more.
- Place bagels on oiled cookie sheet, bake for 15min, flip, then bake 10min more.
