Bagels

Ingredients

  • One loaf worth of bread dough
  • 2T malt extract or brown sugar
  • 1T sugar

Instructions

  1. Mix and knead dough, then let rise for one hour or more.
  2. Punch down dough, and divide into eight portions (twelve for small bagels). Roll each into a ball and set aside to rise 30 minutes.
  3. While rising, preheat oven to 425 and prepare water bath: boil 2qt water with malt/sugars.
  4. Use finger to poke hole through the center of each risen ball. Twirl around finger until hole is stretched to 1.5 inches.
  5. Place bagels in boiling water bath. Boil 2min, then flip and boil 1min more.
  6. Place bagels on oiled cookie sheet, bake for 15min, flip, then bake 10min more.
